I was inspired by a featured build on pcpp "Some Assembly Required" and I decided I -need- this build for when I travel for work. I wont be carrying around a Monitor so I am curious which GPU to pair with this setup to hook up to a standard hotel tv, usually a 1080p tv via hdmi. Thoughts?

A GTX 1660 Super is a great 1080p card, and they don't run hot. Plus as an added bonus this ASUS card matches you build.

....this is if the power supply you have listed with your case has an 8 pin PCIE connector.
