I am looking at building 2 gaming pcs exact same parts for my 10 year olds and also build myself a gaming pc. I would like to keep them under 1200 a piece and want them to experience the process of building a PC. Suggestions would help. Looking for 1080p gaming and possibly VR compatiable.

A good 1080p system that is strong enough to run vr(entry level). You could move up to the 1070 gpu for more future proof and better vr and stay in budget. Build below will do great for 1080p gaming though. All quality parts and upgradable. Understand new release cpu/gpu and parts in general coming over this year(well every year)so things/prices may change a lot come black friday. Assuming you'll need an os at least(monitor, keyboard, mouse??). Awesome Christmas gift by the way:)

If you have a local tech store I'd suggest going to one of them and looking around at some cases and other parts just to get familiar with everything. Also asking around some of the employees will never hurt either because they can answer most of your questions and they, for the most part, know what they are talking about. I am assuming this is your first build so please say something if it isn't but going to a store and really getting know everything will help much more than a website forum. While this forum is great and full of great knowledge, nothing beats seeing everything with your own two eyes.
