How much storage do I need in a SSD for fast boot times and to store OS in??

Get 250 so you can but your OS, a few games, and some general programs. The crucial mx500 is a good choice.

For just your operating system, strictly speaking, 64 GB is enough. But for the OS only, I would use no less than 120 GB storage. You install MS Office and a couple of more things and you run your system for a year and Windows eats up space like nobodies business.

So my rule of thumb: 120 GB + enough capacity whatever else you need to install.

But you can just install your stuff on a separate drive. :)
