well I read something about an m.2 SSD and how it gets really hot, so I opted for SATA-III (I think) because I’m kinda new to this and wasn’t sure if I needed to get extra cooling for it, I actually ordered everything in this build except for the SSD, so what would you recommend for an M.2 SSD?

m.2's do get hotter, but the heat is not likely to be an issue. You will likely be happy with either one, if you can get an m.2 for a good price go for that, if not a 2.5" will suit you just fine, honestly you probably wouldn't even notice the difference between m.2 or 2.5" SATA III
